What is Histamine or Food Intolerance (HIT)?
Never heard of general food or histamine intolerance? You're not the first.
Histamine (a.k.a. food intolerance) is often tough to diagnose, has a complex symptom profile, and is often confused with a multitude of other conditions. Essentially, it is an often-misunderstood food sensitivity; it is not however, a food allergy.
Histamine or food intolerance is a digestive system response to the inability to digest particular ingredients in food without involving the immune system. Conversely, a food allergy is an abnormal response to food triggered by the body's immune system.
Histamine intolerance is generally caused by a defect in the body's histamine breakdown process, in one of two enzyme systems: histamine N-methyl transferase (HMT) and diamine oxidase (DAO). Deficiency in the DAO enzyme system, found in the intestinal mucosa, has been suggested as the most probable cause of histamine intolerance.
When activity of either of these enzymes is lacking, excess histamine may cause numerous symptoms resembling allergic reactions.

Many foods contain histamine and freshness is a big factor.
For many sufferers, their own gut bacteria produces excess histamine causing symptoms. Reacting to fermented foods is a tell-tale sign of histamine intolerance, but many other foods can also be culprits. Foods that are high in histamine include:
